Teig in der Schl\u00fcssel in einen Plastikbeutel stellen, verschliessen, bei Zimmertemperatur 12 bis 16 Stunden aufgehen und g\u00e4ren lassen.<\/li>\n<li>Den sehr weichen Teig auf die mit Mehl best\u00e4ubte Arbeitsfl\u00e4che geben, mit Hilfe des Teighorns oder eines Spachtels rundum nach innen legen. Teig mit Mehl best\u00e4uben und von Hand eine Kugel formen. Auf ein mit Mehl best\u00e4ubtes K\u00fcckentuch legen, Tuchenden \u00fcber die Teigkugel legen, weitere 30 Minuten aufgehen lassen.<\/li>\n<li>Brattopf mit Deckel in die untere H\u00e4lfte des Ofens schieben und auf 230\u00b0C vorheizen.<\/li>\n<li>Brattopf nur kurz aus dem Ofen nehmen, Teigkugel mit Hilfe des Tuches in den Brattopf st\u00fcrzen, Topf sofort verschliessen und in den Ofen zur\u00fcckstellen. Brot bei 230\u00b0C 30 bis 35 Minuten backen. Deckel entfernen, Brot weitere 15 bis 20 Minuten backen. Topf herausnehmen und das Brot auf einem Kuchengitter ausk\u00fchlen lassen.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Rezept aus dem \u00ab UrDinkel-Backbuch \u00bb von Judith Gm\u00fcr-Stalder.
