Spennellare i filetti e farli riposare per qualche ora al fresco.<\/li>\n<li>Incidere la pelle dei filetti per permettere al calore e al condimento di penetrare meglio. Far dorare i filetti da entrambe le parti in una padella senza salarli ma pepandoli. Far raffreddare in frigorifero.<\/li>\n<li>In una terrina, disporre il \u00ab Sel \u00e0 l&#8217;Ancienne \u00bb e aggiungere la farina, il vino rosso, il pepe, le erbe essiccate e l&#8217;albume.<\/li>\n<li>Disporre un pezzo di carta da forno su una piastra di cottura e coprire con uno strato di pasta di sale.<\/li>\n<li>Disporre i filetti uno sull&#8217;altro dal lato della carne per proteggerla. Se i filetti non sono in numero sufficiente per fare delle coppie, coprire il filetto singolo con un po&#8217; di carta da forno sul lato della carne. Ricoprire completamente i filetti con il composto a base di \u00ab Sel \u00e0 l&#8217;Ancienne \u00bb.<\/li>\n<li>Cuocere al forno preriscaldato a 200\u00b0C per 20 minuti e lasciar riposare 10 minuti prima di servire.<\/li>\n<li>Mentre i filetti cuociono preparare la salsa celeste. Far soffriggere lo scalogno nel burro. Deglassare con l&#8217;agresto e aggiungere le more. Portare rapidamente a ebollizione. Passare poi nel mixer con il succo di cottura dei filetti. Condire.<\/li>\n<li>Procedere alla preparazione del piatto. Pulire i filetti con cura prima di tagliarli affinch\u00e9 non siano troppo salati. Servire con la salsa celeste. Accompagnare a seconda dei gusti con un pur\u00e8 di melanzane, una giardiniera e chips di riso Venere.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>Note dell&#8217;autrice: La crosta di \u00ab Sel \u00e0 l&#8217;Ancienne \u00bb protegge i filetti durante la cottura. La salsa celeste \u00e8 una ricetta del tardo Medioevo (XIV secolo), che ci dimostra, una volta di pi\u00f9, l&#8217;importanza delle salse di gusto agrodolce per accompagnare una carne gustosa.
