Sciogliere il burro con agli spicchi l&#8217;aglio schiacciati. Schiacciare le patate con il passino, amalgamare con la panna calda e montare con il burro all&#8217;aglio; condire.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Pur\u00e8 di piselli<\/strong><\/p>\n<ul>\n<li>Cuocere i piselli all&#8217;inglese, passarli nel mixer e al setaccio. Montare la polpa cos\u00ec ottenuta con una noce di burro e condire.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Presentazione<\/strong><\/p>\n<ul>\n<li>Riempire 8 spugnole di pur\u00e8 di patate e 4 spugnole di pur\u00e8 di piselli. Rosolare da entrambi i lati in una padella con un po&#8217; d&#8217;olio poi aggiungere una bella noce di burro, mettere lo scologno sul burro, condire. Lasciar cuocere affinch\u00e9 i gusti si mescolino per 5 minuti. Alla fine della cottura, aggiungere il prezzemolo sminuzzato.<\/li>\n<li>Su une piatto caldo, posare le 3 spugnole alternando i sapori, circondare con sugo di vitello all&#8217;arancio e disporre qualche scorza d&#8217;arancio candita sulle spugnole.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Pur\u00e8 di patate Pelare le patate e cuocerle in acqua salata.
